Spicy chicken curry soup with Gouda cheese

Add spice to this chicken curry soup with shallots, curry powder and fresh herbs. The Gouda cheese gives it a creamy twist your guests will love.

Ingredients:

  • 2 shallots
  • 200 grams ERU Cheese Spread Gouda
  • Olive oil
  • 2 tablespoons curry powder
  • 1 litre chicken stock
  • Fresh herbs or cress
  • Salt and pepper (to taste)

Add spice to this chicken curry soup with shallots, curry powder and fresh herbs. The Gouda cheese gives it a creamy twist your guests will love.

Preparation

  • Clean and finely chop the shallots.
  • Fill a small piping bag with 50 grams ERU Cheese Spread Gouda.

Method

  • Heat a little olive oil and gently fry the shallots over a low heat.
  • Add curry powder and fry for 1 minute.
  • Add the chicken stock and bring to the boil.
  • Add the rest of the ERU Cheese Spread Gouda.
  • Blend until smooth with a stick blender and season with salt and pepper.
  • Fill a bowl and garnish with cheese from the piping bag. Finally add some fresh herbs or cress.
