Recipe with: ERU Cheese Spread Light

Lukewarm salad with low-fat Gouda cheese, asparagus, avocado and mango

Surprise your guests with this festive lukewarm salad with green asparagus, mango, avocado and delicious Gouda cheese. And this spring salad has a nice bite to it too, since it’s topped off with crunchy walnuts.

Ingredients:

  • 200 grams of green asparagus
  • 300 grams of mixed rocket and lettuce
  • 2 avocados
  • 1 fennel bulb
  • 1 mango
  • 100 grams of walnuts
  • 100 grams of ERU Cheese Spread Gouda Light

Surprise your guests with this festive lukewarm salad with green asparagus, mango, avocado and delicious Gouda cheese. And this spring salad has a nice bite to it too, since it’s topped off with crunchy walnuts.

Preparation

  • Wash the shoots of green asparagus and pat them dry.
  • Cut the avocado into thin slices.
  • Peel and dice the mango.
  • Cut the fennel bulb into thin strips.
  • Heat olive oil in a frying pan with olive oil and grill the asparagus shoots until they’re tender.

Method

  • Take a large salad bowl and add the mixed rocket and lettuce.
  • Add the vegetables and fruit.
  • Garnish with chopped walnuts.
  • Before serving, warm up 100 grams of ERU Cheese Spread Gouda Light on low heat and use it to dress the salad.
