This delicious soup is made with chicken stock, cream and fresh cauliflower and broccoli. The melted brie gives the soup a deliciously creamy texture. Also lovely served with fried bacon or home-made croutons.
Ingredients:
200 grams broccoli florets
200 grams cauliflower florets
750 ml chicken stock
150 ml cream
200 grams ERU Cheese Spread Brie
Salt and pepper to taste

Method
Cook the broccoli and cauliflower for around 20 minutes in the chicken stock.
Add the cream.
Blend with a stick blender.
Add ERU Cheese Spread Brie and stir well.
Season with salt and pepper.
Divide the cauliflower-broccoli soup into bowls and serve.
