Wholemeal roll with soft goat’s cheese and vegetables


Top this wholemeal roll with fresh-sweet goat’s cheese and fresh vegetables like courgette, cherry tomatoes and marinated olives. Generously spreading the roll with ERU Cheese Spread Chèvre gives it a full and creamy flavour.
Ingredients:
- 1 courgette
- Olive oil
- Salt and pepper (to taste)
- 150 grams marinated green and black olives
- 250 grams cherry tomatoes
- 4 wholemeal rolls
- 200 grams ERU Cheese Spread Chèvre

Preparation
- Preheat the oven to 210 °C.
- Thinly slice the courgette lengthwise with the cutting machine.
- Drizzle the slices with olive oil, season with salt and pepper to taste.
- Grill the courgette in a grill pan.
- Finely chop the olives.
- Mix the cherry tomatoes with a little olive oil and roast them in the oven for around 3 minutes.
Method
- Cut open the wholemeal rolls.
- Generously spread the rolls with ERU Cheese Spread Chèvre.
- Top with the courgette, roasted tomatoes and olives.
