Recipe with: ERU Cheese Spread Chèvre
Fettuccine with courgette, figs, pecans and goat’s cheese
Enrich the fettucine with a creamy goat’s cheese sauce and slices of courgette. The pecans and figs add something extra to this pasta. A delicious main course on your menu.
Ingredients:
- 2 courgettes
- 600 grams fettuccine
- 100 ml cream
- 100 grams ERU Cheese Spread Chèvre
- 4 fresh figs
- 60 grams pecans
Enrich the fettucine with a creamy goat’s cheese sauce and slices of courgette. The pecans and figs add something extra to this pasta. A delicious main course on your menu.
Preparation
- Thinly slice the courgettes lengthwise with a mandolin.
- Grill both sides of the courgette slices in around 3 minutes.
- Cook the fettuccine
- Bring the cream and ERU Cheese Spread Chèvre to the boil and stir well.
- Slice the fresh figs into four pieces.
- Coarsely chop the figs.
Method
- Divide the fettuccine over 4 plates.
- Add the courgette slices to the fettuccine.
- Spoon the ERU Cheese Spread Chèvre sauce over the fettuccine and courgette.
- Garnish the dish with the figs and pecans.
