Fettuccine with courgette, figs, pecans and goat’s cheese

Enrich the fettucine with a creamy goat’s cheese sauce and slices of courgette. The pecans and figs add something extra to this pasta. A delicious main course on your menu.

Ingredients:

  • 2 courgettes
  • 600 grams fettuccine
  • 100 ml cream
  • 100 grams ERU Cheese Spread Chèvre
  • 4 fresh figs
  • 60 grams pecans

Enrich the fettucine with a creamy goat’s cheese sauce and slices of courgette. The pecans and figs add something extra to this pasta. A delicious main course on your menu.

Preparation

  • Thinly slice the courgettes lengthwise with a mandolin.
  • Grill both sides of the courgette slices in around 3 minutes.
  • Cook the fettuccine
  • Bring the cream and ERU Cheese Spread Chèvre to the boil and stir well.
  • Slice the fresh figs into four pieces.
  • Coarsely chop the figs.

Method

  • Divide the fettuccine over 4 plates.
  • Add the courgette slices to the fettuccine.
  • Spoon the ERU Cheese Spread Chèvre sauce over the fettuccine and courgette.
  • Garnish the dish with the figs and pecans.
