Wholemeal roll with soft goat’s cheese and vegetables

Top this wholemeal roll with fresh-sweet goat’s cheese and fresh vegetables like courgette, cherry tomatoes and marinated olives. Generously spreading the roll with ERU Cheese Spread Chèvre gives it a full and creamy flavour.

Ingredients:

  • 1 courgette
  • Olive oil
  • Salt and pepper (to taste)
  • 150 grams marinated green and black olives
  • 250 grams cherry tomatoes
  • 4 wholemeal rolls
  • 200 grams ERU Cheese Spread Chèvre

Preparation

  • Preheat the oven to 210 °C.
  • Thinly slice the courgette lengthwise with the cutting machine.
  • Drizzle the slices with olive oil, season with salt and pepper to taste.
  • Grill the courgette in a grill pan.
  • Finely chop the olives.
  • Mix the cherry tomatoes with a little olive oil and roast them in the oven for around 3 minutes.

Method

  • Cut open the wholemeal rolls.
  • Generously spread the rolls with ERU Cheese Spread Chèvre.
  • Top with the courgette, roasted tomatoes and olives.
