Fettuccine with courgette, figs, pecans and goat’s cheese
Enrich the fettucine with a creamy goat’s cheese sauce and slices of courgette. The pecans and figs add something extra to this pasta. A delicious main course on your menu.
Ingredients:
2 courgettes
600 grams fettuccine
100 ml cream
100 grams ERU Cheese Spread Chèvre
4 fresh figs
60 grams pecans
Enrich the fettucine with a creamy goat’s cheese sauce and slices of courgette. The pecans and figs add something extra to this pasta. A delicious main course on your menu.
Preparation
Thinly slice the courgettes lengthwise with a mandolin.
Grill both sides of the courgette slices in around 3 minutes.
Cook the fettuccine
Bring the cream and ERU Cheese Spread Chèvre to the boil and stir well.
Slice the fresh figs into four pieces.
Coarsely chop the figs.
Method
Divide the fettuccine over 4 plates.
Add the courgette slices to the fettuccine.
Spoon the ERU Cheese Spread Chèvre sauce over the fettuccine and courgette.
Garnish the dish with the figs and pecans.
