Recipe with: ERU Bio Slices
Vegetarian burger with organic cheese and ratatouille
This wholemeal bun topped with a vegetarian burger, fresh ratatouille of courgette, pepper, onion and tomato puree is a must on your menu. The full flavour of the organic cheese makes a perfect finish.
Ingredients:
- ½ courgette
- 1 pepper
- 2 red onions
- 1 garlic clove
- 1 teaspoon rosemary
- 1 teaspoon oregano
- 1 teaspoon thyme
- 2 tablespoons tomato puree
- 1 tablespoon ketchup
- Salt and pepper (to taste)
- 4 vegetarian burgers (150 grams each)
- 4 wholemeal buns
- 4 ERU Bio Slices
- 4 frisee leaves

Preparation
- Finely chop 1 red onion and crush the garlic.
- Dice the courgette and pepper.
- Fry all the vegetables in a frying pan for around 8 minutes.
- Add the crushed garlic and herbs.
- Finally add the tomato puree and ketchup and season with salt and pepper.
Method
- Slice the remaining onion into rings.
- Grill the vegetarian burgers.
- Place the ERU Bio Slices on the burgers and allow to melt.
- Toast the buns on the cut side for around 1 minute.
- Place the frisee leaves and onion rings on the bottom half of the buns and then top with the vegetarian burger.
- Top with a generous amount of ratatouille.
- Put the top half of the buns back on and serve.
