Recipe with: ERU Bio Slices

Vegetarian burger with organic cheese and ratatouille

This wholemeal bun topped with a vegetarian burger, fresh ratatouille of courgette, pepper, onion and tomato puree is a must on your menu. The full flavour of the organic cheese makes a perfect finish.

Ingredients:

  • ½ courgette
  • 1 pepper
  • 2 red onions
  • 1 garlic clove
  • 1 teaspoon rosemary
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • 2 tablespoons tomato puree
  • 1 tablespoon ketchup
  • Salt and pepper (to taste)
  • 4 vegetarian burgers (150 grams each)
  • 4 wholemeal buns
  • 4 ERU Bio Slices
  • 4 frisee leaves

Preparation

  • Finely chop 1 red onion and crush the garlic.
  • Dice the courgette and pepper.
  • Fry all the vegetables in a frying pan for around 8 minutes.
  • Add the crushed garlic and herbs.
  • Finally add the tomato puree and ketchup and season with salt and pepper.

Method

  • Slice the remaining onion into rings.
  • Grill the vegetarian burgers.
  • Place the ERU Bio Slices on the burgers and allow to melt.
  • Toast the buns on the cut side for around 1 minute.
  • Place the frisee leaves and onion rings on the bottom half of the buns and then top with the vegetarian burger.
  • Top with a generous amount of ratatouille.
  • Put the top half of the buns back on and serve.
