Thai scampi burger with slices of cheddar with sambal
Surprise your guests with this home-made scampi burger with slices of cheddar with sambal. The spicy twist contrasts nicely with the fresh flavour of cucumber, lettuce and the lime peel in the burger.
Ingredients:
3 sprigs fresh parsley
400 grams black tiger prawns
4 teaspoons Thai spices
Lime peel
Salt and pepper (to taste)
1 red onion
¼ cucumber
4 ERU Slices Cheddar Sambal
4 Italian rolls
100 ml mayonnaise
4 baby Romaine lettuce leaves

Preparation
Finely chop the parsley.
Slice the red onion in rings and the cucumber in thin slices.
Mince the prawns, parsley, 3 teaspoons Thai spices and lime peel with a meat grinder.
Season with salt and pepper.
Shape into 4 equal-sized burgers.
Method
Grill the scampi burgers.
Top the scampi burgers with the ERU Slices Cheddar Sambal and allow to melt.
Toast the buns under the grill on the cut side.
Mix the mayonnaise with the remaining Thai spices and spread over the bottom half of the bun.
Top with the lettuce leaves followed by the grilled scampi burger.
Garnish the rolls with the red onion and cucumber. Place the top half of the buns back on and serve.
