This toasted sandwich with melted Gouda cheese, smoked halibut and fresh guacamole is worth a place on the lunch menu. Vary and experiment with the other ERU Cheese Spreads, such as ERU Cheese Spread Gouda Extra Aged for an extra strong flavour.

Preparation

  • Spread 4 slices of spelt bread with ERU Cheese Spread Gouda.
  • Divide the smoked halibut over the toast.
  • Top each with a tablespoon of guacamole.
  • Add salt and pepper (to taste).
  • Cover with the other slices.
