Spicy chicken curry soup with Gouda cheese
Add spice to this chicken curry soup with shallots, curry powder and fresh herbs. The Gouda cheese gives it a creamy twist your guests will love.
Preparation
- Heat a little olive oil and gently fry the shallots over a low heat.
- Add curry powder and fry for 1 minute.
- Add the chicken stock and bring to the boil.
- Add the rest of the ERU Cheese Spread Gouda.
- Blend until smooth with a stick blender and season with salt and pepper.
- Fill a bowl and garnish with cheese from the piping bag. Finally add some fresh herbs or cress.
