Sandwich with sweet potato, tomato and avocado

Ingredients

  • 2 sweet potatoes
  • 2 tomatoes
  • 1 red onion
  • 2 avocados
  • 8 slices of brown bread
  • 150 grams ERU BioGouda
  • 100g oakleaf lettuce
  • Olive oil
  • Salt and pepper

Preparation| 5 min

  • Peel and thinly slice the sweet potatoes.
  • Coat the slices with olive oil and scatter with salt and pepper.
  • Slice the tomatoes.
  • Peel and slice the onions into rings.
  • Halve the avocados. Remove the stones and scoop the flesh out of the shell. Mix until smooth.

Method| 10 min

  • Heat a frying pan and fry the sweet potato slices on both sides until light brown and cooked.
  • Spread ERU BioGouda on one side of 4 slices of bread.
  • Place the 4 slices of bread with the spread side upwards. Top with the sweet potato slices.
  • Then garnish with the lettuce, onion rings and tomato slices.
  • Top with the remaining 4 slices of bread.
