Toastie with cheddar, avocado, mango, cress and sambal

Feel like a sweet yet spicy toastie? Try this toastie with avocado, mango and the sharp flavour of sambal. Ready for a spicy lunch?

Ingredients

  • 1 mango
  • 2 avocados
  • Olive oil
  • 8 slices of brown bread
  • 1 carton of cress
  • 8 slices of ERU Slices Cheddar Red Pepper

Preparation| 5 min

  • Peel the mango, remove the stone and slice thinly.
  • Remove the stone and peel the avocados and slice thinly.

Method| 10 min

  • Grease the toastie maker with olive oil for each toastie.
  • Spread 4 slices of bread with a layer of mango and avocado slices and scatter over some cress.
  • Finally, top the bread with 2 slices of ERU Slices Cheddar Red Pepper.
  • Top with the remaining 4 slices of bread.
  • Heat a toastie maker.
  • Cook the toasties in around 2 minutes until golden brown.
  • Cut the toasties in half diagonally.
