Sweet potato fries with ratatouille and organic Gouda cheese

Choose these crispy sweet potato fries with ratatouille and fresh herbs for a wonderfully colourful dish. The organic Gouda cheese is deliciously flavoursome and contrasts nicely with the fresh vegetables.

Ingredients:

  • 1 kg sweet potatoes
  • Olive oil
  • 1 onion
  • ½ courgette
  • 1 pepper
  • Salt and pepper (to taste)
  • 1 garlic clove
  • 1 teaspoon rosemary
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • 2 tablespoons tomato puree
  • 1 tablespoon ketchup
  • 200 grams ERU Cheese Spread BioGouda
  • 100 ml vegetable stock

Choose these crispy sweet potato fries with ratatouille and fresh herbs for a wonderfully colourful dish. The organic Gouda cheese is deliciously flavoursome and contrasts nicely with the fresh vegetables.

Preparation

  • Preheat the oven to 230°C.
  • Peel the sweet potatoes, cut into thick fries. Spread over a baking tray lined with greaseproof paper.
  • Chop the onion and crush the garlic.
  • Dice the courgette and pepper.
  • Drizzle with olive oil and turn. Season with salt and pepper.
  • Bake the fries in the middle of the oven until cooked in around 35 minutes. Turn every 10 minutes.

Method

  • Fry all the vegetables in a frying pan and add garlic, rosemary, oregano and thyme.
  • Add the tomato puree and ketchup and season with salt and pepper.
  • Remove the sweet potato fries from the oven and arrange on a plate.
  • Top with the ratatouille.
  • Mix ERU Cheese Spread BioGouda with the stock and drizzle generously over the vegetables.
