Sweet potato fries with ratatouille and organic Gouda cheese
Choose these crispy sweet potato fries with ratatouille and fresh herbs for a wonderfully colourful dish. The organic Gouda cheese is deliciously flavoursome and contrasts nicely with the fresh vegetables.
Ingredients:
- 1 kg sweet potatoes
- Olive oil
- 1 onion
- ½ courgette
- 1 pepper
- Salt and pepper (to taste)
- 1 garlic clove
- 1 teaspoon rosemary
- 1 teaspoon oregano
- 1 teaspoon thyme
- 2 tablespoons tomato puree
- 1 tablespoon ketchup
- 200 grams ERU Cheese Spread BioGouda
- 100 ml vegetable stock
Choose these crispy sweet potato fries with ratatouille and fresh herbs for a wonderfully colourful dish. The organic Gouda cheese is deliciously flavoursome and contrasts nicely with the fresh vegetables.
Preparation
- Preheat the oven to 230°C.
- Peel the sweet potatoes, cut into thick fries. Spread over a baking tray lined with greaseproof paper.
- Chop the onion and crush the garlic.
- Dice the courgette and pepper.
- Drizzle with olive oil and turn. Season with salt and pepper.
- Bake the fries in the middle of the oven until cooked in around 35 minutes. Turn every 10 minutes.
Method
- Fry all the vegetables in a frying pan and add garlic, rosemary, oregano and thyme.
- Add the tomato puree and ketchup and season with salt and pepper.
- Remove the sweet potato fries from the oven and arrange on a plate.
- Top with the ratatouille.
- Mix ERU Cheese Spread BioGouda with the stock and drizzle generously over the vegetables.
